Marvellous Muffins!

Just wanted to share a recipe with you. These are a fav with my family and i brought some into the office to share today... Really easy and yummy!
They are called Marvellous Muffins!
2 cups SR flour
2/3 cup sugar
½ cup oil (I use light olive oil)
2 eggs
1 teaspoon vanilla
¾ cup buttermilk
2 cups any fruit* (fresh, stewed, frozen)
Heat oven to 190 degrees C
Sift Flour into large bowl, add sugar and combine. In a small bowl, whisk eggs with oil milk and vanilla. Add fruit to dry ingredients* followed by egg mixture and combine gently.
Pour into muffin pans and bake for 20 mins at 190?C
*Suggestions
- Fresh/stewed/canned pie apple with cinnamon and sugar topping
- Frozen mixed berry and white choc
- Banana/chocolate
- Apple/raspberry
I also use the base of this recipe, omit the sugar, add ½ cup grated cheese and then add some sundried tomatoes, diced spring onion, fetta and a handful of baby spinach, cracked pepper and turn them into savoury muffins!
You might like to give these a go. They freeze really well and can be easily heated for 30 secs in the microwave.
