Roasted Tomato and Capsicum Soup

Yum yum best soup ever!

  • 8 big ripe tomatoes
  • 1 big red capsicum
  • 2 cloves garlic
  • handful of basil and parsley
  • good olive oil

1. Segment & deseed capsicum & place on baking tray lined with baking paper.

2. Cut tomatoes into quarters and place on same tray

3. Finely chop garlic, basil and parsley - sprinkle all over tomatoes and capsicum.

4. Sprinkle olive oil all over tomatoes and capsicum

5. Place in oven for 45 mins at 150 degrees

6. Tip all into a flask and blend till smooth

    It was a really cold/crisp morning in Melbourne today so that is what I think is going to be on the menu for my lunch today! Soup! Thanks for the inspiration :-)

     I might try making the tomato soup, using the roasting method to cook vegetables first.
