Super Healthy Pesto

A delicious, healthy pesto to serve tossed through your favourite pasta, spread over savoury crackers for afternoon tea or on the side with roasted vegies for a tasty vegetarian dish.

SUPER HEALTHY PESTO

  • 25g each skin-on almonds & brazil nuts (or californian walnuts) OR 50g skin-on almonds
  • 1 tightly packed cup chopped fresh basil leaves
  • 1/2 cup chopped fresh parsley
  • 2 tablespoons cold pressed extra virgin olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon chopped parmesan cheese and a sprinkle fresh ground pepper

Place nuts in food processor and pulse till chopped. Add remaining ingredients and process briefly till all ingredients finely chopped and well combined.

Remove from processor and serve tossed through your favourite pasta or as a topping on savoury crackers.

Can be stored in airtight container and stored in the fridge.
