Cauliflower soup

- Chop 2 - 3 Leeks and 2 cloves of Garlic
- Cook in teaspoon of olive oil until translucent
- Add curry spices and salt and pepper to taste
- Add chopped - 3 x Carrots, 1 - 2 x potatoes and 1 x Cauliflower
- Cover with low salt Veggy or Chicken Stock
- Cook till soft
- Blend to smooth consistancy
You can serve with cream and cheese but I like it just as it is.....and it freezes really well!
