Audrey's cheesy muffins
CHEESY HAM & PINEAPPLE MUFFINS.
2& a half cups of plain flour
1 tablspoon baking powder
1 teaspoon salt 200g ham finely chopped
1 cup grated tasty cheese
1third cup snipped chives
1 tablespoon sugar
1&quarter cups milk
1 egg
60g butter melted
410g can crushed pineapple drained.
set oven to 180
sift flour,baking powder &salt into large bowl.stir in ham sugar & half cheese & chives.
make well in centre ,in a jug whisk egg butter & milk and fold into flour mixture with the pineapple
combine all together.
spoon mixture evenly into patty tins filling each one two thirds full
bake in oven for 20 mins until lightly golden and firm then sprinkle rest of cheese & chives on top
and bake a further4-5 mins cool for 5 mins and turn out. This makes 2 dozen small or 1 dozen texas size.
good for school lunches frozen & wrapped in glad wrap regards Audrey.
