Raspberry & White Chocolate Muffins
While going through chemo I was invited to a friends dinner party. I was humming and harring about going as I would have to dress up and put my hair on and what was the use when I couldn't taste anything. Anyway...I went and the only thing I could taste was the beautiful flavours in the muffins. The raspberries had a nice tang to them and the chocolate well that was something I didn't lose the taste for so it was yum. RASPBERRY AND WHITE CHOCOLATE MUFFINS (You can add broken up hazelnuts or other nuts if you like). 3 cups of S/R Flour Sift 1 cup caster sugar 125grams white chocolate chips 125grams butter 1 egg 1 cup milk ½ cup cream 1 tspn Vanilla Essence 200gram frozen Raspberries (12 extra raspberries for decorating the top) Instructions: Sift flour and add dry ingredients Melt butter, add all ingredients except Raspberries and mix well. Add frozen Raspberries. Do not over mix. Mixture can be lumpy. Bake 200 degrees for 22-25 mins till golden on top and lightly bounces back when pressed on top. To make a nice muffin case, cut greaseproof paper into a square and place into each muffin tin and press down with a glass to make paper fit tray properly. Hi Everyone, My name is Donna. Im 23yrs old. Last month i had surgery on my right breast to remove 6 lumps. I had biopsy's done earlier in the year and they came back as fibroadenomas but given their size my surgeon thought best to remove them. When i went to my post op appointment my surgeon informed me 5 of the 6 lumps were phyllodes tumors. She now wants to do a second operation to remove the surrounding tissue. I also have 5 lumps in my left breast that she wants to remove aswell as the surrounding tissue. My doctor is also sending me to a genetisist . I think my best option is to have a double masectomy/reconstruction. I joined this website to hear other peoples opinions, stories and experiences. Just want to invite people to share meal ideas/ recepies that work for them. Many of us have families with children and transitioning to this new life style is very difficult while adapting to many other aspects that come with being diagnosed with breast cancer. I thought we could start separate one for breakfast and lunch too. I find breakfast and lunches need to be quick and easy to keep them up in the long term. I have a family that loves flavour,eat large meals and like variety so this has certainly been a challenge to me. I find people start off on the vegan lifestyle very eager but struggle after about 1 month. This is a good reference to refer people to when they are starting out, or getting bored with their routine. Please be detailed with each idea so those of us not familiar will know how to prepare it from the entry.
