My go to is a bolognese with zoodles.
500g packet of minced protein of your choice ( beef, chicken, pork , meat substitute)
1 jar of pasta sauce of your choice
1 onion of your choice diced
Spiralised zucchini
Fry off the onion and protein until brown then toss in the pasta sauce.
Simmer away for as long as you need.
Meanwhile run the zucchini through the spiraliser then soak in boiled water from the kettle for about 4 minutes then drain.
Put the zucchini on a plate and put the bolognese on top add cheese and herbs of choice.
This has gotten through a lot of nights when I was too tired to cook during chemo and radiation and after. You can play around with the protein as you can stomach it (I had an aversion to red meat on the chemo!). Hope it helps you out!,
