What are your easiest, tastiest meals - quick to prepare when you can't think of anything!!

Festive fare for a vegetarian can be tricky! Over a couple of decades I’ve tried most things! ‘New’ is challenging.  But anything for Christmas that starts with a plan a month ahead has lost me anyway!
