Bruschetta with avocado, tomato, hazelnuts & mozarella - YUM!

Hello wonderful chefs!

I though i would share this great recipe for Bruschetta with avocado, tomato, hazelnuts & mozzarella that i found.

It goes great as a side to some pasta and its perfect to make on the weekend - or in my case, to please the household master chef (other wise known as my Italian nonna)  

These are what you need to get started:

  •     2 avocado, peeled
  •     1 lemon zest and juice
  •     Pinch of flaked sea salt
  •     Few twists of black pepper
  •     1 punnet cherry tomatoes
  •     ¼ cup hazelnuts roasted and skins removed
  •     100ml extra virgin olive oil
  •     4 slices good sour dough toast
  •     1 small clove garlic, peeled
  •     2 buffalo mozzarella fresh in brine
  •     8 basil leaves
  •     75g grated Parmesan (grana padano)

    We had this for breakfast this morning. Everyone loved it! I am always stuck for different healthy ideas for breakfast as my husband has a lot of food allergies which make it tricky. Thanks Jess. There were lots of good ideas on the link. :) Deanne xxx
