Pumpkin Fruit Loaf

All my friends love this cake but my husband doesn't! It's foolproof and has no eggs and no oil/butter.

  • 1 pkt mixed dry fruit (375gms)
  • 1 cup of apricot nectar (200mls)
  • 1 teaspoon honey
  • 1/2 teaspoon sodi bicarb
  • 1 cup cold cooked/mashed pumpkin
  • 1 cup self raising flour.
  • 1 teaspoon of mixed spice
  • walnuts are optional

Prepare your pumpkin earlier and put in fridge.

Start by greasing/ lining a loaf tin.

Turn on oven to around 160-180 degrees.

Start cake by putting dried fruit, apricot nectar and honey into a saucepan and bring to boil on stove.

Then simmer for 3mins.Tip into a bowl and allow to cool a little. Now mix through pumpkin, sodi bicarb, spice and then lastly, flour.

Spoon into the loaf tin and cook for 30 - 40mins (depending on your oven)

Gently press down in the middle with your finger-should feel firm,not soggy. Cut with a bread knife.

This is such a moist yummy cake and must be healthy cos you are getting a vegetable and fruit in one-right?
