Easy, low fat spaghetti carbonara - (Not that I care about low fat!)
1pkt (500g) spaghetti (any type of pasta is fine)
1 diced onion (I use frozen diced onion, easy peasy)
3-4 rashers bacon diced (I use shortcut)
3-4 large eggs (use more if using small eggs- this makes the sauce)
1 pkt parmesan cheese
cracked black pepper
fresh parsley if you have any, if not don't bother
Slurp of white wine (no need to open a bottle tho)
Slash of oil if needed to cook onion and bacon in frypan
Cook the pasta in a large pot (I add a slurp of oil and some salt to the water)
Cook the onion then add bacon in a pan, use some oil if required. Once cooked, add a slurp of white wine, which will evaporate. (good excuse to open it)
In a bowl or jug whisk 3-4 eggs, about 1/2 cup parmesan cheese, chopped parsley and pepper.
Once pasta is cooked, pour the onion and bacon mix and the jug of egg mixture into the large pot, stir- bingo. Sprinkle parmesan over top if you like.
Bingo!
