Cauliflower soup

  • Chop 2 - 3 Leeks and 2 cloves of Garlic
  • Cook in teaspoon of olive oil until translucent
  • Add curry spices and salt and pepper to taste
  • Add chopped - 3 x Carrots, 1 - 2 x potatoes and 1 x Cauliflower
  • Cover with low salt Veggy or Chicken Stock
  • Cook till soft
  • Blend to smooth consistancy

You can serve with cream and cheese but I like it just as it is.....and it freezes really well!
